The fuel gauge and speedo intermittently work - is there any known issues or anything I can do to fix this?

I would get the speedo chip checked behind the speedo sounds like it's a bad connection some fitters use connectors on the wires when really they are supposed to be soldered .

Welcome to the Forum.

If you want I can email you the wiring  instructions for the speedo chip so you can check everything done correctly as said they are supposed to be soldered .

It’s always worth checking battery connections are nice and tight and the battery itself is in good order. 
Low voltage can sometimes cause spurious faults.
