Roof video screen
Roof should come on with factory head unit when stationary. (yes there is a remote) The key and key 2 are for steering wheel controls if i remember correctly. Changing the headunit will disable functions such as lane control, etc. make sure you get one that supports a secondary output screen if you want to keep the dropdown unit.

Removing rear seat rails / bars
theres bolts inside the rails. you have to undo them i think it was a 10 socket or 11. however you need to pull the carpet out to get them off properly. as there are some bolts on the ends and side too.

you can but it will be so expensive. on their parts its around $1000 second hand ones are going for 100 - 200 pounds. I would by a aftermarket one and splice the cables. Ebay toyota front cameras link.

Toyota Alphard Recall in the UK - Takata Airbag Recall
Good to hear it. less vehicles on the road with faulty airbags that the small metal tank which inflates the airbag could explode.
-
Bike carrier
Some people use Thule roof bars, or a tow bar rack. I'd recommend using a tow bar rack if you've got one.
